Fall is underway and Alessi Farro is the perfect comfort food to enjoy on crisp fall nights. Farro can be a daunting ingredient if you aren’t familiar with it, but take it from Nila Knisell: It’s as easy to work with as it is delicious. Knisell had no experience with Farro when she created her tasty recipe for Farro with Veggies. This recipe is simple enough for any home cook, but delivers a combination of flavors worthy of a professional chef. Her recipe combines the warm comfort of Farro with the familiar delight of sautéed vegetables to create the perfect side dish for any fall dinner. Prepare Alessi Farro according to package directions but substitute 1 part water with chicken or vegetable broth.

While farro is cooking prepare vegetables.

For every 1 cup of dry farro you are preparing saute the following in Alessi Extra Virgin Olive Oil:

1 large sweet onion

1 clove garlic

1 diced zucchini

1/2cup sliced mushrooms

1/2 red pepper

While vegetables and farro are hot, toss together.

Salt and pepper to taste. 

Garnish with diced, deseeded fresh tomatoes and scallions. Serve hot.
